Grape varieties: Corvina 70%, Corvinone 25%,Rondinella 5%.
Vineyard area: Monte Tenda, Monte Crosetta, Rasso — on the top of limestone hills in the Fumane, and San Pietro in Cariano areas, where the soil is ideal for the production of great red wines.
Yield: 7 tonnes (from 3000 to 5000 vines per ha)
Training system: Guyot, double Pergola, single Pergola.
Harvest Date: End of September – beginning of October, grapes are hand-picked and only the best part of the bunch is kept for raisining on screens under condition of temperature and humidity control.
Vinification: Beginning of January. The grapes are crushed and fermented in conical tanks at 14º C, with daily plungings.
Elevage: In barrels /l arge vats for 33/36 months. It is aged for further 12 months in the bottle, before release.
