Recioto della Valpolicella Classico DOC | organic

The Recioto della Valpolicella is one of the great italian sweet wines.


Grape varieties: Corvina 70%, Corvinone 25%,Rondinella 5%.
Vineyard area: Monte Tenda, Monte Crosetta, Rasso: On the top of limestone hills in the Fumane and San Pietro in Cariano areas where the soil is ideal for the production of great red wines.
Yield: 7 tonnes (3000 to 5000 vines per hectare).
Training system: Guyot, double pergola, single pergola.
Harvest Date: End of September — beginning of October. Grapes are hand-picked. Only the best part of the bunch is kept for raisining on screens under condition of temperature and humidity control.
Vinification: Beginning of February. Fermentation under controlled temperature with selected yeast strains that extract and highlight the wide range of aromas from this jewel of nature.
Elevage: After some time in barrel to harmonise structure and aromas, the wine is transferred into large oak vats to complete the maturation process. It is then aged in the bottle until selected for release.

Total acidity: 6,84 g/l
Sugars: 115,90 g/l


Intense ruby red colour with a slight purple hue. Bitter cherry aromas and sweet tabacco harmonise with undertones of wild berry and cocoa. The taste is both balanced and full flavoured, spicy and satisfying.
