Grape varieties: Corvina.
Vineyard area: The grapes were grown on the hills close to Verona. The vineyards have alluvional origin, are rich in minerals and have been certified organic since 2014.
Yield: almost 7 tonnes (5000 vines per hectar)
Training system: Guyot.
Harvest Date: From mid-August according to the ripening stage. Only manual harvesting for a careful control of the grapes.
Vinification: vinification in stainless steel tank. The crushed grapes undergo a cold pre-fermentation maceration (at least 7 °C) of at least 1 day. This is followed by cold pressing and static decantation. Alcoholic fermentation takes place at 14°C and goes on after bottling.
Elevage: To complete the fermentation, the bottles are kept in a dark place at a controlled temperature. During this resting period, the yeasts degrade by lysis, giving the wine its unique traits.

TASTING NOTE
Light pink with orange reflections, with fine and remarkable perlage. Good olfactory intensity with typical spicy scents, citrus notes of pink grapefruit and small red berries. Pleasantly fresh and mineral on the palate with good softness and decisive persistence. Excellent as an aperitif, should be served chilled.
Food pairing: finger food and fish starters.
