Our organic wines

Great wines do not originate in wineries but in vineyards.
This is the concept at the base of the whole wine-making process of Valentina Cubi.

Our wines bear their own names dedicated to the Valpolicella territories and history.
Each one with a precise character.

IPERICO, the Valpolicella Classico, was the first organic wine we ever produced. It boasts floral, fruity and pleasantly spiced notes. It goes straight into the bottle, after racking, decanting and steel refinement. This is an everyday wine, fresh and easy-to-drink.

ILTABARRO, the Valpolicella Superiore, is produced selecting the best Valpolicella wine in our winery. This extremely versatile wine successfully combines fresh, fruity and soft oak notes. It is refined in wooden barrels for one year.

ARUSNATICO, the Ripasso, a textured wine which is also greatly fresh and fruity. According to tradition, it is produced from the second fermentation of the Valpolicella Superiore over the pomace of the Amarone. It features a brilliant colour, it is clean on the nose and boasts extreme elegance on the palate.

MORAR, the Amarone, after four years of refinement in wooden barrels and at least two in bottles, is sold only when it is ready to be an authentic emotional experience. Our Amarone boasts a dry and refined style, is balanced on the nose and round on the palate.

MELILOTO is the Recioto. It is produced only during the best vintages. Meliloto is the traditional sweet wine, for holidays and special moments.

MORAR and MELILOTO are wines obtained from the withering of the Corvina, Corvinone and Rondinella grapes, at least for 90 days for the Amarone and 120 days for the Recioto.

 QB, Rosso delle Venezie IGT, intense garnet-coloured with good intensity, born from the union of Corvina, Rondinella and Molinara with Cabernet Sauvignon and Sangiovese. Cherry, liquorice and spices are its dominant notes.

 SIN CERO, a spontaneously fermented wine with no added yeasts or sulphites added. A wine produced only in excellent vintages, embraces its territory and embodies its most authentic expression, also thanks to the exclusive use of local grapes.

 ANTENATUS, fresh, vibrant, with a bubble that supports the sip. It is the result of two years of experimentation on a traditional vine very dear to us, such as Corvina.
